Let's say I scanned a document with multiple pages as jpg and I need to save them as a single pdf file, can I use Preview or do I really need Acrobat?

You can also use Pages (iWork). Just paste the images and save them as PDF:

    Files>Export...>PDF>OK

Leopard Preview can do that, just drag and drop the image to 1 file

i never felt the need to install adobe acrobat on my mac since Preview pretty much handles all my pdfs, and pictures and whatnot
