We downloaded iTunes 9.1 today via Software Update and it seems that the ability to convert music from one format to another is gone. Tried right-clicking on a song, the option was normally there but now it's gone.

How do we now convert from mp3 to aac and vice-versa?

You can still convert to AAC via the menu, i.e., Advanced > Create AAC Version

That's right. It used to be in the context menu when you right click a song. Now you just have to go through the menu to convert to MP3/AAC.
