alfiesy, In the preferences, under the importing tab, set it to whatever you wish, say mp3 16kbps. Then control-click the track you want to convert and you'll see an option to "convert selection to mp3". Same with your second question.
What Ken said. However, iTunes won't allow you to convert encrypted AAC files (bought from the iTMS, etc.) to MP3 files. If you encounter this situation, what you need to do is burn the AAC files to audio CD first then re-encode the audio CD tracks to MP3s. ~Henjie
