just tap and hold the application icon and press the (x) or you can go to itunes and uncheck all the applications you don't like.
I have an ultimate all-in-one product called iMac, a magical and revolutionary product called an iPad and a phone that is vivid, fast, slim, the Galaxy S2.

tap and hold on the application (or any icon). The icons will start to jiggle and will also have an x on the upper left of each app store application you downloaded. tap on that and it will prompt you before deleting it.
You can also delete it from iTunes and sync your iPhone. It should remove it once it completes synching.
Edit: antz88c pressed the post button first.

you can also uncheck the applications you don't want installed on your iphone in your itunes the next time you sync.
