Help my iMac says that i have to restore my ipod

my ipod is an ipod touch version 1.1.1
i purchase apps for it like labyrinth etc
a while ago when i tried restoring it the only option is to go 1.1.2

now how do i get it to restore it as a 1.1.1 and not a 1.1.2
i need all the help i can
and when i do restore it how do i get the license for my purchased products
if i registered i via the iPod itself

for now my ipod is working fine but i have to update in the near future to
sync new song and movies
any and all help is appreciated
