It is my understanding that crispy pata was the invention of the owner of Bario fiesta. He used the pig knuckles that were normally discarded. He served this to friends during drinking sessions. Now it is a staple dish of Filipino restaurants.

Interesting trivia, I thought that crispy pata was a Europian influence. I remember my German friends Telling me that deep fried pork knuckles was a traditional German dish.

When it comes to these things, no one can truly claim inventing it. I am sure it had been done as soon as man had cooking oil, a vat, and pigs. But here in the Philippines, at least for 3-4 generations, he is credited for creating it.

Hmmm will try to check out tom's one of these days. Sorry couldn't suggest in the pasig area, but ee usually get out crispy para fix from annalisa's in kamuning & teacher's vill or mah-lu-tong in sct. santiago.
