    Noot kinilaw but the sashimi dishes at Matsuri are great. Sesame oil based.

    Tried not only once, but twice at Giligan's.

    I'm sure it's tuna kinilaw and i love it. Kuhang kuha nya ung panlasa ko since I'm a big fan of Kinilaw na isda (dilis, tuna, etc), I know what's delicious and what's not. Dapat talaga, fresh ang isda kapag ikikilawin, chilled not frozen. You'll notice the difference on quality and the texture. Nakakagutom tuloy oh. I just ate a tuna kinilaw last night (home made from a tuna exporter's house) and it was goood!

    We used to have a "kambingan" before. My father would order goat from Antipolo/Montalban and have it delivered to us. Then he would butcher it himself. The lean meat would be use for "caldereta". The intestines/innards would be use for "papaitan". And the skin would be use for "kilawin". He will slice off the skin from the meat, boil it to soften, cut and mix with vinegar, onions, garlic, ginger, salt, pepper and siling labuyo. Yes, best served chilled.
