Textedit and Microsoft Word immediately come to mind...

Seriously, start a blog. There are a lot of options online. For example, you can get a LiveJournal account and download the Mac blogging client for it, XJournal. That way you can blog from anywhere, and see it on any computer, even if you're travelling.

Having an online diary/journal/blog doesn't necessarily mean everyone will or can read it. It doesn't have to be publicly accessible. The privacy level's entirely up to you.

MacJournal is also good way of starting a diary/journal.

I like MacJournal, so easy, so logical. It's what I use for taking down notes

Since iBlog requires .Mac (I no longer have a .Mac account), I signed up for LiveJournal and I'm using XJournal (LJ weblog client). This combination works for me and a growing number of LJ/MUGers out there.

You could try Circus Ponies Notebook, Polywogg or Blogwave Studio (both blogging tools) or Idea Knot. Just do a search on Version Tracker.
