Grab your stuff using Senuti or Detune. If that doesn't work, use PhoneView

Don't you have a music library in your iTunes? By default, iTunes makes a backup of all music you put/place there; unless you changed the settings already

They are supposed to pull data from your device without using iTunes so you can make a new backup and allow you to upgrade your device. Try searching them and check if they fit to what you want to do. Your manual backups are supposed to be still in your computer unless you switched machines and have no access to your previous manual backups

You are able to sync your apps therefore your iPod is recognized and linked with your iTunes account. If that is the case, you can still change your backup settings by clicking your device name on the left. Then carefully go over your sync settings for all the panels in the main screen. When settings are ok, sync. Your data should be backed up according to your settings.

If iTunes tells you it has to erase your data before it can sync then you have not set up your iPod to sync with account. You will lose your data if you sync.

Thanks! What if I try syncing from a new device would ITunes prompt me for a new sync setting? Thanks!

iTunes places the backup files in the following places:

    Mac:~/Library/Application Support/MobileSync/Backup/
    Windows XP:\Documents and Settings\(username)\Application Data\Apple Computer\MobileSync\Backup\
Note: To quickly access the Application Data folder, click Start, and choose Run. Type %appdata% and click OK.
Windows Vista and Windows 7:\Users\(username)\AppData\Roaming\Apple Computer\MobileSync\Backup\
Note: To quickly access the AppData folder, click Start. In the search bar, type %appdata% and press theReturn key.
